I4c School of Cool 2026: Three Sessions, One Emerging Story

The School of Cool program at this year’s International Cool Climate Chardonnay Celebration delivered what its name promises: a working education in what cool-climate winemaking actually looks like right now, told through three quite different lenses — Canadian Chardonnay by province, the coming-of-age of Canadian traditional-method sparkling, and a global tour of Pinot Noir and Chardonnay built around limestone and chalk. Taken together, the three panels sketched a single, coherent narrative: cool-climate producers everywhere are converging on precision, restraint and site transparency, even as they arrive there by very different routes.

Session one, moderated by Sommelier and i4c 2026 Keynote speaker Véronique Rivest, set the terms of reference, gathering winemakers from Nova Scotia, Prince Edward County, Quebec, Niagara and the Okanagan for a blind tasting of provincial Chardonnays. Canada’s international Chardonnay footprint remains modest — roughly 3100 acres across the country, or about 0.6% of the 500,000 acres planted globally — but the diversity packed into that small number is remarkable. And chardonnay is, in most trade observers mind, the flagship grape of Canada.
What emerged from the session wasn’t a single “Canadian style” so much as a shared commitment to freshness and acid retention expressed through wildly different textures: the saline, reductive tension of Nova Scotia’s maritime sites; the limestone-and-clay-driven length of Prince Edward County, where some producers are experimenting with amphora; the seabed soils and rising vinifera plantings of Quebec; the lake-tempered balance of Niagara’s Lincoln Lakeshore; the dense, almost tannic-grained concentration coaxed from heavy clay on the warm St. David’s Bench; and the riper, texturally generous wines of a warm, dry Okanagan, where smoke mitigation is now a standing technical concern. Winemaking choices were consistently in service of texture rather than power — whole-cluster pressing, native-yeast barrel fermentation, partial or full malolactic, judicious bâtonnage and, in several cases, minimal filtration. The recurring point, made by several panelists in different words, was that harmony doesn’t require blandness: these wines can be structured, even idiosyncratic, and still feel resolved.
Session 2 on sparkling wine, moderated by Globe and Mail writer Christopher Waters, told a maturation story rather than a regional one. Canadian sparkling has been in development since the 1970s, but the panel dated the real inflection point to the 2013–2015 window and the founding of the Fizz Club, an industry forum that accelerated technical knowledge-sharing in a category that punishes shortcuts. The through-line across every producer at the table was a move away from entry-level, mass-market fizz toward vineyard-specific, long-lees-aged traditional method — Trius’s multi-vintage Showcase built from twenty-plus parcels and years of lees ageing; Rosehall’s shift from non-vintage to site-specific vintage bottlings; Hidden Bench’s acidity-led picking; Stratus’s blank-canvas, high-precision approach with dosage as low as 2 g/L. Picking for acid rather than ripeness, longer autolysis, and lower dosage were the common technical threads — in short, sparkling wine following Chardonnay’s own trajectory from promise to genuine maturity, provided consumers keep buying in to fund the patience it requires.
The third session zoomed out to a global scale, pairing Pinot Noir and Chardonnay across five regions united by one variable: active limestone or chalk. From Languedoc’s high-altitude Burgundian project in Limoux to Elgin’s Atlantic-cooled slopes in South Africa, decidedly cool Prince Edward County, the biodynamic Dobbin property in Niagara, and Alto Adige’s Dolomitic sites, the panel made the case — traced back to Benedictine and Cistercian site selection — that calcium carbonate correlates with vine stress, acid retention and mineral definition regardless of hemisphere. Viticultural practices converged too: low cropping, tight spacing, cover crops, whole-bunch pressing for Chardonnay, and gentle, cold-soaked extraction for Pinot Noir. Climate change was the session’s uninvited co-panelist, cited repeatedly as the force pushing harvest dates earlier and pushing growers toward cooler exposures and staged picking almost everywhere represented.
Read together, the three sessions describe an industry — and a global cool-climate movement — past its experimental adolescence. The questions being asked now are precise ones: how much new oak, how long on lees, which exposure, how much malolactic, not whether any of it works at all. That’s a genuinely encouraging place for Canadian Chardonnay and sparkling wine to be standing.
