It feels counter-intuitive, however sparkling Shiraz is an Australian favourite, often not seen outside of Oz. Made by the Hickinbotham family. According to the family it is Bouquet: Lifted sweet plum with traces of liquorice, mulled jam along with spice fruits and dark cherries.
Palate: Succulent creams with a persistent mouth filling sensation with an explosion of earthy black fruits, followed by a smooth velvet tannin finish.
I couldn't tell you for sure if thats right, but it tastes bloody good.
