The 2011 Project Paso Cabernet Sauvignon offers good value for its $18 price tag. The nose has enticing scents of sweet saddle leather, brown leather gloves, rib-eye steaks and rough brown cotton. The attack is generous and plump with a slight mineral vein in the way of a brown rice note. The acids come up to add their two cents on the finish, giving the wine a slightly compressive and angular finish, albeit fresh. Drink up.
