Tasting the 09.
Deep rich colour, the Baco looks like a Syrah in the glass. Oak aromas first hit the nose followed by Baconess. Smokey, sour cherry, mineral and dried blueberry on the nose. The oak stands strong which is key, because it stands up to the big fruit, acid and earth coming from this concentrated fruit. Huckelberry, dried saskatoons, and fresh beets being pulled directly from moist-healthy soils on the palate. This wine has big berry acid and needs rich, gamey food: Moose prosciutto, venison bresola, smoked ducked and Jerusalem artichokes. Tasted June '11
